Tastes kind of like rabbit. Kinda gamy, especially in the spring. Better in a stew.

My family is from West Virginia. It's definitely a hunting culture, and I am definitely part of the first generation who didn't hunt for food out of some degree of necessity. But they usually ate what they shot--even when it was a "varmint." That doesn't seem to be the case there anymore. A groundhog's primary purpose is sighting in the rifle scope for deer season these days.

Over time, this has bred some extremely wary groundhogs. It's hard to get within a couple hundred yards of one now.
